I use this knife for handling high-hydration bread dough. It works great - the blade has just a bit of flex and is very thin. Also works great for cleaning my pastry board. Goes through the dishwasher fine. Highly recommended!

I have a couple tools from level 5 and never experienced this... sadly the blade was bent in the one corner upon arrival. I was wondering why it was performing so poorly right out of the package.I’m going to hope this is just an exception, which is the reason for 3 stars.

This 8-inch taping knife is the perfect size for shaping taut sour dough loaves of bread. The stainless steel blade is food safe and the handle very comfortable in the hand. I wasn't able to make such perfect loaves with an ordinary bench knife, but this one makes shaping easy, which means less handling of the dough and better oven spring. And I love the red handle. It's MY new favorite tool and not going anywhere near the garage!
