Utensile della favolosa linea Premana della Sanelli, che ancora una volta presenta una lama perfettamente affilata, o, in questo caso, appuntita e robusta, un ulteriore attrezzo professionale a prezzi tuttavia accessibili, certamente non a buon mercato, ma comunque, anche chi come me li acquista per un uso domestico, sa essere in realtà destinati a professionisti del settore alimentare, per un uso in macellerie o ristoranti, dove solitamente i costi per l'eccellenza sono molto più elevati.

This is not the cheapest knife available, and with the blade shape not being common either I suspected it was either going to be exceptionally good or underwhelming, and unfortunately it's the latter.The blade is too short to reach the muscle when the shell is on the larger side. In the process you have to scratch the plastic bolster part of the handle against the shell, and it starts looking worn our very quickly. Then it's only the tip of the blade which is sharpened, with the edges being dull, while it arguably should be the other way around because this way it is harder to break or bend the tip. The edge is so dull out of the box that it struggles with cutting through the muscle.All and all, you can still use this knife successfully, but it won't offer much difference with models what cost x3 cheaper.

E' un ottimo prodotto, si impugna bene,si adatta a qualsiasi mano, l'acciaio non flette e la punta penetra nell'ostrica facilmente.la lama e' ,però, a mio giudizio troppo larga e produce troppi detriti prima di arrivare al muscolo per reciderlo e ,quindi aprire l'ostrica,; io ho reso la lama più stretta,lasciando la punta originale, con un disco per l'acciaio senza bruciare i contorni.Sarebbe interessante sapere cosa ne pensa la ditta che lo produce
