A lovely book- very good recipes. Even for a non vegetarian it is a good book to have. I have purchased both Japan Cookbooks from Phaidon and they really fit together.

This is the best book about plant based Japanese food. Design, recipes, authenticity, deep knowledge. Love it.

My family has moved toward a plant-based diet over the past several years, so I’ve become familiar with how to put together delicious, filling vegetarian dishes without meat. This cookbook, though, takes vegetarian cooking to a whole new level. If I could define “gourmet vegetarian,” it would be the dishes in this cookbook. Interesting, creative and always tasty, the recipes are easy to follow. Beyond the recipes themselves, this cookbook includes several narrative sections about Japanese food, ingredients and the culture represented by these dishes. The author is an excellent writer and brought me into the world of vegetables in Japan. Highly recommend.

A fantastic and very thorough book.Organised through traditional Japanese principles (dressed food, simmered food, fried food etc), with a great deal of variety.Nancy's love of Japanese traditional food shines through in everything she writes and this book is no exception.Well bound and nicely presented volume that has gone straight to my 'everyday cooking' shelf.
